How it's built: sales per labour hour = net revenue ÷ monitored-FOH paid hours; cost per labour hour = FOH labour cost ÷ hours; contribution per hour = sales − cost; per week = × hours. FOH is the same monitored-service definition as Productivity (kitchen and head office excluded). This is a model, not a saved figure — nothing here writes to the live system.
